Knowing how to cure a new masonry oven is what protects that investment from steam damage, cracking, and compromised long-term performance. The first fires should be deliberate, modest, and patient – not a celebration-size blaze.

How to cure a new masonry oven over five days
A five-day schedule is a proven conservative approach for a true masonry oven, provided it aligns with the instructions for your model. Build each fire near the center of the cooking floor, keep the door off or partially open as needed for clean combustion, and use the chimney to move moisture and smoke out of the chamber. Let the oven cool naturally after each session. Do not spray it with water or force-cool it.
Day 1: Hold at about 300°F
Begin with kindling and a few small splits. Bring the oven gradually to approximately 300°F and maintain that temperature for around four to six hours. The dome may darken with soot, and you may see condensation or moisture at the mouth or flue. That is normal. Keep the fire small enough that you can hold the temperature without repeated spikes.
Day 2: Return to 300°F
Repeat the first day’s low-temperature firing. The second day matters because moisture deep in the dome and insulation travels outward slowly. A single low fire does not dry a substantial masonry structure all the way through. Maintain roughly 300°F for another four to six hours, using small additions of wood rather than a larger fuel load.
Day 3: Raise to about 400°F
On the third day, increase the target temperature to approximately 400°F. Continue to build the fire gradually and hold the temperature for four to six hours. By now, the oven should be responding more predictably, but this is still a drying fire, not a pizza fire. Resist the temptation to push the floor and dome toward full live-fire temperatures.
Day 4: Work up to about 500°F
Raise the oven slowly to around 500°F and keep it there for four to six hours. Use slightly larger splits only as necessary. The fire should remain manageable, with no sudden surges from adding too much wood at once. This stage helps condition the oven for higher temperatures while continuing to release residual moisture from the structure.
Day 5: Reach about 600°F
On the final curing day, bring the oven to about 600°F over a measured period and maintain it for several hours. At this point, the oven is approaching useful cooking territory, but it still benefits from controlled heat. After the hold period, let the fire burn down and allow the oven to cool naturally.
If the oven was exposed to rain, installed during persistently humid weather, or still shows obvious signs of moisture, extend the schedule with another low or moderate firing day rather than accelerating it. Patience is less expensive than repairing a finish or dealing with preventable masonry stress.
What not to do during the curing process
The most common mistake is building a full pizza fire on day one. A bright, roaring fire can make a new oven look spectacular, but visual drama is not the same as proper commissioning. Do not chase a white dome during the early cure. That visual cue of high heat belongs to later cooking sessions, once the oven has been dried and conditioned.
Do not close the oven tightly while it is actively drying. Moisture needs a path out. Likewise, do not cover a warm oven in a way that traps steam around the structure. A quality weather cover is useful once the oven has cooled, particularly in coastal or rainy environments, but it should never turn the curing process into a sealed, damp enclosure.
Avoid judging temperature only by the size of the flames. The floor, dome, and air inside the chamber do not heat at the same rate. Check multiple locations with an infrared thermometer when possible, especially the dome and cooking floor. Gentle consistency is more valuable than a single high reading.
After curing: your first real cooks
After the final curing fire and a full natural cool-down, begin cooking with moderately hot fires before moving immediately into all-out pizza service. Flatbreads, roasted vegetables, baked dishes, and chicken are smart early cooks because they let you learn how the oven stores and releases heat. Then build toward high-heat pizza sessions, moving the fire to one side and allowing the cooking floor to stabilize before launching a pie.
