The goal is not simply to get the oven hot. The goal is to create the right balance of top heat, bottom heat, and flame for the food you intend to cook.

When someone says an oven is at 850°F, that number only tells part of the story. In a true wood-fired oven, the dome, hearth, and flame each perform a distinct job.

The dome heat radiates down onto the pizza, cooking the cheese, toppings, and exposed rim. And the floor heat conducts upward into the dough and determines how quickly the base crisps. The live flame provides active convection and the finishing color associated with properly fired pizza.

For a fast, Napoli-inspired pizza, the dome should be thoroughly saturated with heat and the floor must be hot enough to set the base quickly without burning it before the toppings finish. If the floor is too cool, the pizza can emerge pale and soft underneath. If it is too hot, the bottom may char while the cheese remains underdone.

This is why a premium firebrick oven matters. Real refractory brick absorbs, holds, and releases heat gradually, making the oven more forgiving throughout a long service or evening of entertaining. Lightweight ovens may heat quickly, but they can lose stability after several pizzas. Dense masonry construction gives you a deeper reserve of usable cooking heat.

Build the Right Fire Before You Chase a Number

Heat management begins well before the first pizza is stretched. Start with clean, dry hardwood split into a range of sizes. Smaller pieces establish flame quickly; medium splits build the coal bed; larger pieces sustain the fire once the oven is hot. Damp wood creates excessive smoke, burns inefficiently, and makes temperature control needlessly difficult.

Build your initial fire near the center of the oven. This allows the flame to heat the dome evenly as the oven comes up to temperature. Keep the door off during active firing unless weather conditions require a brief shield from wind. An open oven draws oxygen through the mouth, feeding the fire and sending heat across the dome.

As the fire grows, add wood in measured increments rather than overloading the chamber. A mountain of wood can produce an aggressive flame and a hot reading on a thermometer, yet leave parts of the dome insufficiently saturated. A steady, clean-burning fire is more valuable than a dramatic one.

Watch the interior dome as it heats. In a properly fired masonry oven, the black soot on the dome begins to burn away, revealing the natural color of the firebrick. This clearing is one of the most dependable visual signs that the oven has stored substantial heat. It is not a substitute for measuring the floor, but it tells you the fire has done meaningful work.

Measure the Floor, Not Just the Dome

An infrared thermometer is one of the most useful tools for wood-fired cooking. Take readings at several points across the hearth: near the fire, in the center, and toward the entry. These zones rarely read the same, especially after the fire has been moved to one side.

For classic Neapolitan-style pizza, many cooks work with a floor in the approximate 700°F to 800°F range, alongside a fully heated dome and a lively side flame. The exact sweet spot depends on dough hydration, sugar content, pizza thickness, and topping load. A lightly topped, high-hydration dough can tolerate more floor heat than a pizza carrying a heavy layer of sauce, vegetables, or cured meats.

Do not place the infrared thermometer too close to a glowing coal or active flame and assume the reading represents the full hearth. Measure the clean cooking area where the pizza will actually sit. Check again after every few pizzas. The floor loses heat with each launch, while a well-managed fire continues to recharge the dome.

A visual floor test is helpful as a secondary check. Place a small pinch of flour on the hearth. If it blackens immediately, the floor is likely too aggressive for your current pizza style. If it takes several seconds to toast, you may have a more forgiving surface. Flour is only a rough indicator, since it burns differently than hydrated dough, but it can alert you to an obvious problem before you sacrifice a finished pizza.

Move the Fire to Control the Cook

Once the oven is fully heated, push the fire to the left or right side, keeping a compact coal bed beneath the flame. This opens the center of the hearth for cooking and creates a hot zone closest to the fire.

The position of that flame is your primary control lever. A higher, more active flame delivers stronger top heat and cooks the rim faster. A smaller flame produces a gentler bake and gives you more time to set the bottom. Add a small split of hardwood when the flame begins to diminish, not after it has disappeared completely. Waiting too long can leave you with hot bricks but insufficient top heat.

Rotate pizzas frequently. In a live-fire oven, the side nearest the flame cooks faster than the opposite side. After the base sets, usually within the first part of the bake, use a turning peel to rotate the pizza in small movements. This creates even blistering and prevents one edge from scorching.

If the bottom is cooking too quickly, move the pizza farther from the fire or toward a cooler section of the hearth. If the toppings need more color but the base is already finished, lift the pizza slightly with the peel and hold it closer to the dome and flame for a brief finish. This is a classic wood-fired technique, and it is especially useful for pizzas with fresh mozzarella or moisture-rich toppings.

Recover Heat Between Pizzas

The first pizza of the evening is often not the test. The fifth or tenth pizza reveals whether the oven is being managed well. Every pizza pulls energy from the hearth. Every open door or prolonged launch loses heat. Every addition of wood affects the flame profile.

Give the oven short recovery moments when needed. Rake the coals together, add a modest split of wood, and allow the flame to reestablish itself before launching the next pizza. This may take only a minute or two in a properly heated brick oven, but forcing pizzas into a fading chamber creates inconsistent results.

For a party, avoid making every pizza enormous or heavily topped. Smaller, well-built pizzas cook more predictably and allow the hearth to recover between launches. Keep dough balls covered and toppings organized before the oven reaches peak heat. Good preparation is heat management too, because it keeps the oven from sitting open while you assemble ingredients.

Adjust for Different Pizza Styles and Foods

Not every meal calls for a blazing 800°F floor. A thin, fast-fired Neapolitan pizza needs intense radiant heat and an active flame. A thicker pan pizza, flatbread, roasted fish, or cast-iron dish benefits from a calmer chamber and less aggressive hearth.

For medium-temperature cooking, let the active fire burn down and use the door strategically to retain stored heat after the flames settle. A door should never be used to smother a vigorous fire, but after active firing it can help preserve the oven’s retained energy for roasting and baking. Always keep airflow and fire safety in mind, particularly with indoor installations.

In humid Florida conditions, dry wood and properly proofed dough matter even more. Moisture in fuel slows the fire; excess moisture on dough or toppings can delay the bake. Use restrained sauce, well-drained mozzarella, and ingredients that are ready to cook at high heat. A wood-fired oven is powerful, but it cannot compensate for a soaked pizza surface.

Read the Pizza and Refine the Fire

The pizza itself gives the final instruction. A blackened bottom with pale cheese means the hearth is too hot relative to the dome and flame. A pale, soft base with over-colored toppings suggests excessive top heat or insufficient floor temperature. A pizza that cooks evenly but lacks char may need a livelier flame, while one that burns along the fire side needs more frequent rotation or a slightly calmer fire.

Keep notes during your first several cooks: floor readings, wood additions, bake times, dough formula, and results. Over time, you will recognize the conditions by sight and sound – the clarity of the flame, the color of the hearth, the feel of the peel as the pizza sets.
