How Do You Build a Brick Oven Fire?

It might seem simple but there really are a few key steps you need to take to build a brick oven fire successfully.  The goal is to heat up the floor, walls and top of the brick dome for consistent heat all around. Follow these steps and you are sure to succeed every time. A Forno Nardona Napoli Oven on a large base with a nice file inside and smoke coming out the top. This is how you build a brick oven fire.

1. Use only dried hardwoods – like oak, cherry, apple, NOT sap woods like pine.
2. Place your wood in the center of the dome in 4 layers like a log cabin.
3. Place kindling between the layers of wood.
4. Light it and let it burn until the dome goes from black to its original color.
5. Then move the fire to one side of the oven.
6. Clean the floor in the center with a wet brush.
7. Cook on the clean floor.
8. Add more wood for flame by placing it on the fire with a metal turning peel.
